Creamy pumpkin risotto

Pumpkin 1/2 (green skinned orange meat)
Risotto 1 cup
Chicken stock concentrate
Dash of cream
1/2 onion
2 cloves garlic
Walnuts

1. Steam pumpkin - 8min instantpot. Scrap out meat
2. Instant pot sautée mode- Sweat onion, add garlic, add risotto, gently coated
3. Add 2.5 cup of water with chicken stock concentrate . Instant pot manual 20min
4. Add pumpkin, dash of cream, sor milk, cheese, salt and pepper to taste
5. Optional - warm honey coated walnuts
