FLUFFY pancakes

(make 6 pancakes)

3/4 cup milk
2 tablespoon white vinegar
1 egg
1 cup of flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoon sugar
2 tablespoon melted butter
Cinnamon
Vanilla drops

1. mix milk and vinegar to make 'sour milk' = substitute for buttermilk, leave for 5-10min
2. Separate egg yolk and white, fluff egg white
3. Mix dry ingredients
4. add 'sour milk', yolk then white last
5. mix till no lumps, but ok to have some bubbles
6. 3/4 ladle full for each pancake, heat at medium heat and flip
7. keep warm in saucepan / oven
8. serve!
