Fresh homemade crusty bread - easy and no knead

T's mom sent some fresh mountainkase from the Austrian Alps and homemade jams from fruits in the garden. Only fresh homemade bread can do this spoiled luxury justice! Googled the world's easiest bread and viola - it is really as advertised!

To make a small loaf for two:
- 1.5 cups bread flour
- 180ml warm water
- 1 tsp active dried yeast
- 1 tsp sugar
- 1 tsp salt

1. Proof yeast and mix all in an ungreased bowl with spatula. Form a roundish dough, doesn't have to be perfect at all.
2. Cover and warm rise for 2 hours until double in size.
3. +/- cold rise in fridge for 12-30hrs. The let it warm to room temp for 1/2 hr
4. Preheat oven to 230c.
5. Dust baking sheet and counter lightly with flour. "No knead". Fold edges in several times with spatula and transfer to baking sheet with round top on top. Score it with knife
6. Bake with I) Dutch oven II) baking pan as lid (III) fill lower pan immediately with boiling water and close door immediately to trap steam. Bake 30min with lid then 12 without.
7. Rest 10min and serve!

Note: tried steam method, no way I could trap any steam. Perhaps use a glass tray next time? Baking pan was pretty easy. May need to uncover to bake earlier - crusty but can be crustier.
