Jerk-spiced grilled corn with toasted coconut
Grilled coconut jerk corn is one of my absolute favourites at Limewood. I would drag T to go, luring him with the promise of 48 hour slow-cooked chargrilled beef shank when in fact what I really, really want is this corn. This isn't exactly a replica of it but it's damn tasty, too.
1 cups coconut flakes
3 corn ears, cut in half
1/4 cup mayo
Juice of 1 lime
2 tablespoon of jerk dry rub (1.5 tsp salt, 1 tsp chilli, 1 tsp crushed red pepper flakes, 1tsp thyme, 1.5 tbsp sugar, 1/2 tbsp mustard powder, 1tsp minced garlic, 1/2 cayenne pepper, black pepper)
1. Grill corn on stove with some olive oil, turn to char corn on all sides (with cover to avoid oil splashing), around 10min
2. Grill coconut flakes in oven ~8min till brown (turns quickly!!)
3. Mix jerk dry rub into mayo
4. corn --> mayo --> coconut
YEAY! Serve with lime wedges
