Thai style lettuce wraps
2 lettuce head (small ones with sturdy leaves)
1/2 cup mint leaves
500g minced chicken (or pork)
1 tablespoon fish sauce
1 tablespoon sugar (or stevia sugar)
1 tablespoon raw rice - finely blended into powder
1 red chilli pepper - chopped
1 tablespoon chilli powder
2 shallots - chopped
2 limes
1. Gently cook the minced chicken in boiling water with some salt. Drain water out completely.
2. Add chopped shallots to chicken while still warm
3. Mix into the chicken: chilli powder, chopped chilli pepper, some salt, fish sauce, and sugar. Juice of 1 lime. One lime to serve.
4. Add the rice powder to dry it up. If not available, just a bit of corn starch.
5. Add mint. Lots of mint!
6. Wrap and eat!
