- Ingredients:
- - Aubergines 2, large chunks
- - 1 onion
- - 2 cloves garlic
- - small ginger, grated
- - 1tsp tumeric, 1 tsp cumin, 1/2 tsp chilli powder
- - coconut milk 400ml
- - peanut butter 1tbsp
- - balsamic vinegar 1 tbsp
1. Pan fry aubergines first
2. Add everything else and simmer for 15min
