Ratatouille

- 1 can of chopped tomatoes
- 1 soup extract
- 1-2 tablespoons balsamic vinegar
- salt/ pepper

- 1 aubergine
- 2 tomatoes
- 1/2 yellow / red pepper
- 1 courgette
- 1/2 onion
- 2-3 cloves of garlic
- (1 carrot)

1. roughly chop up everything
2. Fry onions till translucent, then put everything in
3. Pour chopped tomatoes and soup extract last
4. Bring to boil. Medium heat for 1/2 hr to 45min. Stir to prevent burning.
5. Serve with cheese. Bread / rice
